If you like banana bread, you will love this recipe! This recipe yields a plantain bread that turns out sweet, moist, and guava infused! It’s perfect to enjoy through the week or to bring to a potluck.
Plantains or platanos are commonly found in South American, Caribbean, and African cuisines. They can be enjoyed in sweet or savory recipes. For sweet recipes such as this one, be sure to use a sweet plantain or platano maduro, Avoid the yellow/green plantains and instead choose a plantain that is black.
You will need:
- A loaf pan (8 ½ inches X 4 ½ inches X 2 ½ inch)
- 3 sweet plantains (plantains should be black to ensure they are sweet)
- 2 eggs
- 1 ½ cups of multi purpose flour + 1 teaspoon
- 1 cup of plain greek yogurt
- 6 tablespoons of butter (room temperature)
- ⅓ cup of guava paste cubes + 1 tablespoon (as small as a chocolate chip)
- ¼ cup of brown sugar
- 2 teaspoons of baking powder
- 1 teaspoon of salt
Directions:
- Preheat your oven to 325F.
- Peel the sweet plantains and cut them into slices.
- Then, add them to a large bowl and mash them until they become a puree. (You can use a fork or potato masher).
- Next, add the eggs, butter, and greek yogurt. Use a whisk to combine until you get an even mixture. Set aside.
- Grab a medium bowl and add the 1 ½ cup of flour, baking powder, and salt. Whisk until fully combined.
- Add the wet ingredients to your dry ingredients and use a spatula to gently fold over the batter until it is evenly mixed.
- Grab your guava paste cubes and lightly coat them with flour (about 1 teaspoon). Tip: Coating the guava paste cubes with flour will prevent them from sinking to the bottom of the bread.
- Next, add the brown sugar and guava paste cubes to the batter. Use a spatula to gently fold them in the batter.
- Line your loaf pan with parchment paper and pour in the batter.
- Use a spatula to smooth out the top to ensure a smooth even distribution.
- Tap the pan against the counter a few times to remove any air bubbles.
- Use a knife to create a line at the top of the batter (long way). This will give the loaf a nice finish when it bakes.
- Add a few more guava paste cubes to garnish the loaf.
- Bake for 1 hour and 20 minutes.
- Once it’s finished baking, remove from the oven and let it cool for 30 minutes before cutting.
- Top with guava glaze or enjoy alone!
