Colombian Style Loaded Chips
Ready in 10 minutes—no oven, all flavor!
These Colombian style loaded chips lean into the party foods we grew up with: rippled potato chips, salsa rosada, an herby ají pique, queso fresco, frijoles rojos, and a pop of piña. It’s a fast, no-cook appetizer perfect for game day, movie night, or an easy snack.

What You’ll Need:
- 1 bag of crinkle cut black pepper kettle chips (7.5 oz)
- 3/4 cup crumbled queso fresco
- 3/4 cup frijoles rojos (kidney beans), or other vegetarian protein/meat of choice
- 1/2 cup diced fresh pineapple
- 1/3 cup diced green onion
- 1/4 cup salsa rosada (ingredients below)
- 1/4 cup aji pique (ingredients below)
- Flaky salt to taste
- 1/4 cup of mayonnaise
- 2 tablespoons ketchup
- 1 tablespoon lime juice
- ¼ teaspoon garlic powder
- ¼ teaspoon onion powder
- ¼ teaspoon salt
- ¼ teaspoon black pepper
Ají Pique (Colombian Hot Sauce)
- 1 cup of loosely packed cilantro leaves
- 1/2 cup of roughly chopped green onions
- 1/4 cup roughly chopped jalapeno (remove seeds)
- 1/3 cup of roughly chopped tomatoes
- 4 tablespoons of freshly squeezed lemon juice
- 1 tablespoon of water
- 1 teaspoon of distilled white vinegar
- 1 teaspoon of minced garlic
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
Directions:
- Make the sauces. Stir salsa rosada ingredients until smooth. Blend the ají ingredients. (Step-by-step sauce directions are here: salsa rosada + aji pique)
- Build the base. Evenly spread potato chips on a large platter.
- Top it. Scatter pineapple, green onion, queso fresco; drizzle salsa rosada; top with frijoles (or your choice of protein), and spoon over ají.
- Serve immediately. Chips stay crispiest if you build right before eating!
- Yields 4-6 servings.
