Arepa de huevo (pronounced: ah-reh-pah de weh-vo) is an egg-stuffed arepa. These arepas are very popular in the coast of Colombia. In Cartagena, vendors sell them on the street and they are delicious!
Arepas de huevo are typically crunchy on the outside and have a soft sunny-side egg in the inside. They are fried and have a beautilful golden color.
Although they are perfect as is, I was looking to make an arepa de huevo that was not fried and one that I could easily make at home.
These arepas de huevo are savory, light, and portable. They make for a perfect breakfast or snack. I love enjoying them with my favorite hot sauce as well!
You will need:
- 1 1/4 cups of water
- 1 egg
- 1 cup of precooked white corn meal (I always use PAN)
- ¼ cup chopped spinach
- ¼ cup of shredded cheese (I like queso fresco)
- 2 tablespoons of butter (I use Earth Balance Vegan Butter)
- olive oil spray
- ½ teaspoon of salt
- A pinch of black pepper
- A pinch of garlic powder
- A pinch of onion powder
- A pinch of salt
Directions:
- Preheat a large non-stick pan to medium heat. Add an egg and cook until it is over-easy. Set aside.
- Add the cornmeal flour and salt into a large bowl and whisk.
- Heat the water and vegan butter in the microwave for 1 minute.
- Add the water/butter mixture to the cornmeal flour and mix well with a spatula until there is no dry flour remaining.
- Once the flour begins to absorb the water and the dough cools off, you can begin mixing with your hands. Mix until there is no dry flour remaining. Once the dough is ready it should look (a little softer than cookie dough.
- Make equal size arepa dough balls.
- Place one arepa dough ball at a time into a flat surface.
- Then place a flat plate on top of the arepa dough ball and press to flatten it. Note: they should flatten to be as wide or wider than the sunny-side egg).
- Repeat until you have flatten all the arepa dough balls.
- Then, take one flattened uncooked arepa and add the egg, salt, pepper, garlic powder, onion powder, cheese, spinach. Make sure all the toppings are inside the arepa.
- Next, take a second flattened uncooked arepa and place it over the arepa with toppings.
- You will want to cover it completely being sure not to squeeze the yolk. Then, use your fingers to pinch the edges and seal them together ensuring that there are no gaps.
- Place the stuffed arepa on a non-stick and lightly greased. Cook on medium heat for 7-9 minutes on each side.
- Enjoy with your favorite hot sauce, aji pique, guac, or cilantro-lime mayo.
- Recipe makes 2-4 arepas. Add more sunny-side eggs in the beginning if you are making more than one stuffed arepa.
