Cilantro-Lime Rice
Although, cilantro-lime rice is not traditionally a Colombian way of serving rice, cilantro and lime are key ingredients in Colombian cuisine! With that being said, this cilantro-lime recipe pairs well with all of my favorite Colombian dishes.
The rice is zesty, fresh, light, and earthy. I love to pair it with beans and veggies!

What You’ll Need:
- 2 cups of water
- 1 cup jasmine white rice
- 1/4 cup chopped fresh cilantro
- 1 tablespoon of fresh squeezed lime juice
- 1 tablespoon of olive oil
- 1 1/2 teaspoon salt
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
Directions:
- Wash the rice. Do this by placing the rice in a strainer and running it under water until the water runs clear.
- Then, place the rice into a stainless steel pot. Add the water, olive oil, salt, garlic, and onion powder. Stir to combine.
- Turn the stove to the highest heat setting. Bring to a boil.
- Keep boiling until you see bubbles forming on the surface and most of the water has evaporated. This will be about 10 minutes total (from the time you turned on the stove).
- Give the rice a quick stir to ensure all the water has evaporated and to prevent it from sticking.
- Cover the pot with a lid and lower to the lowest heat setting on your stove. Cook in the lowest setting for another 20 for minutes, being sure to not open the lid.
- At the end of the 20 minutes, open the lid. Add the cilantro, lime juice, and mix well.
- Yields about 5-8 servings.
- Enjoy with black beans, red beans, or with huevos pericos!
