Spring Mix, Chimichurri Tofu, and Coconut Rice

Every Sunday I prep my lunch for the week to ensure that I have a nutritious and delicious meal during work to help break my day up! I usually make 8 lunches and it takes me about an hour and half.

The menu this week is made up of: Spring mix with feta cheese, tofu in a chimichurri marinade, and coconut rice with cilantro.
