the perfect meal prep for me consists of two proteins, a veggie, a fruit, and something sweet! the fruit and sweet treat are not pictured, but this little salad pairs well with the ADOBO SEASONED TOFU and COLOMBIAN STYLE LENTILS.

¡mi almuerzo ideal consiste de dos proteínas, una verdura, una fruta y algo dulce! la fruta y el dulce no se muestran en la imagen, pero esta pequeña ensalada combina bien con el TOFU SAZONADO EN ADOBO y LENTEJAS AL ESTILO COLOMBIANO.💕

these AREPAS BOYACENSES are CHEESY, SWEET, and THICK!

with over 75 different types of arepas, it’s hard to choose a favorite! these arepas are from the Boyaca region of Colombia and they are known for being thick, they contain panela , cuajada, and flour + cornmeal.

Notes:
-i used brown sugar instead of panela and queso fresco instead of cuajado.
- because they are so thick, i like to hold the edges of each arepa to the heat to give it a little color. i forgot to include this clip in the reel, but i will share it on stories!

be sure to top with flaky salt for the maximum sweet and savory flavor!

con más de 75 tipos diferentes de arepas, ¡es difícil elegir un favorito! estas arepas son de la región de Boyacá en Colombia y se caracterizan por ser gruesas, tener panela, cuajada y harina de trigo + harina de maíz.

usé azúcar en lugar de panela y queso fresco en lugar de cuajado

these colombian style EMPANADAS are HEARTY, CRUNCHY, and perfect with AJI PIQUE.

these empanadas take some time to make from start to finish, but the process can be divided into 4 steps: make the filling, make the dough, shape the empanada, and fry/airfry!

pair with aji pique and enjoy!

Tip: make the filling ahead of time to decrease your cooking time the day of.
